Meursault AOC

That Arnaud Ente is rarely seen outside of his vines or cellar is a reflection of his tireless dedication to his métier, and a key to the stellar quality of his wines. For the Entes, it’s not about pursuing the spotlight, although their incredibly sought-after wines have made them stars in the region. Arnaud and his wife, Marie-Odile, work primarily on their own to craft an exquisite range of micro-production white Burgundies from Meursault and Puligny-Montrachet. Precision, purity, elegance, and finesse are the best descriptors of the Ente style. Each vine is nurtured through every step of the yearly cycle, and each cru and village wine receives the exact same impeccable treatment; even the “entry-level” Aligoté and Bourgogne Blanc show the layered richness and complexity of a much more sophisticated appellation.

Large 600-litres barrels are used for his Aligoté, Bourgogne Blanc and part of his regular Meursault cuvée. The rest is vinified and aged in normal barrels for the first year, without placing too much emphasis on new oak. With the thoughtfulness for which Arnaud is known, the percentage of new wooden barrels used for his best wines has dropped from 35% to 20% and a variety of different barrel types are now used to increase the complexity of the final wines. The must is left to stand for 24 hours then the clear juice and the fine lees are put in barrels for 11 months of aging before being racked in vats for a further maturation of six months. They are bottled without fining or filtration.

Puligny Montrachet Champ-Gain

The wine produced on this appellation is said to be one of the greatest white wines in the world. The name of Puligny originated in the Gallo-Roman times, when a certain Puliniacus creates his field, about 2000 years ago. The limestone gives the Chardonnay a unique subtlety enhanced by a South-East exposure and slopes that help drainage. The white wines of Puligny offers a set of very distinguished noble aromas: almond paste, fern, exotic fruits, amber, white flowers. In the mouth, acidity is rather unobtrusive, leaving a soft expression and an intense impressive persistence. The best climate of the appellation are Les Folatières, La Pucelle and Les Caillerets. Les Folatières produce wines rich and bold. La Pucelle is contiguous to Bienvenue-Bâtard-Montrachet, and Les Caillerets are next to le Montrachet. These two climates produce wines full of finesse and remarkably characterized by intense aromas of honey.

Puligny Montrachet 1er Cru les Referts

Les Referts is a Premier Cru vineyard in the famed Puligny-Montrachet appellation of Burgundy's Cote de Nuits sub-region. Like most of the village, Les Referts is planted to Chardonnay, although this vineyard's position at the base of the hill gives a slightly richer, generally less floral wine than is usually associated with Puligny-Montrachet wines.
