Located in a cold cellar off the Place de Puits in Chassagne-Montrachet, just uphill from Domaine Ramonet, the Lamy-Caillat estate holds 1.2 hectares of vineyards. First vintage was in 2011 but early results are already exciting enough to get wine lovers’ attention.
Lamy-Caillat is a freshly new domaine but its creator is not a “rookie”. Sébastien Caillat, a civil engineer by training, is the son-in-law of René Lamy and is also the winemaker for Domaine René Lamy-Pillot. He and his wife Florence created Domaine Lamy-Caillat when they took over the vines and cellars of an elderly neighbour. With Lamy Caillat Sébastien wanted to attempt something more artisanal and minimally processed than what he does at Lamy-Pillot. The winemaking approach at Domaine Lamy-Caillat is thus very different.
Sébastien uses an old mechanical press and then transfer the juice into barrels for alcoholic and malolactic fermentation. After 2013 vintage Sébastien started to implement longer maturation, spending around 28 month on lees. Starting in wood barrels and finishing the last six months in stainless steel. Sébastien might sometimes fine his wines but never filter them. He pays strong attention to detail, using unbleached corks and sealing all his bottles with a first layer of wax. He would also put a more esthetical wax when labelling bottles.
La Romanée
Origins of the lieu-dit: medieval texts from 1007 to 1271 mention a Roman villa in the neighbouring lieu-dit « Les Embazées», (Ambassiacus= Roman villa); «La Romanée» is therefore likely to refer to the presence of a Roman road nearby or that Romans cultivated vines here.
Vines in shallow soil, well exposed slopes with cool nights and hot afternoons, producing very intense wines with good length.
Les Caillerets
Origins of the lieu-dit: «Caille» is a dialect word meaning
«caillou/caillouteux»’ (pebble/pebbly); the suffix «-ret» is a Burgundian diminutive.
Vines in shallow soil, well exposed slopes of pebbly marl
producing rich wines, tight and harmonious.
